Coconut and chocolate cupcakes


There’s a good news- I’m moving houses soon. I’m gonna move to different city at the start of September. And I hope that I’ll find a new job quickly, otherwise I’ll be force to travel to my current one half an hour in a train. We will see. Anyway back to a new town. After we found a perfect flat we went for a lunch with bf’s work friends. It was do much fun to sit in a garden, have a nice chat and a drink. Of course I had to mention that my hobby is baking and that I have a blog. So now I’m baking a batch of cupcakes for them. As a first I chose a chocolate muffins with creamy frosting with marshmallows and coconut. I’m also planning to bake a carrot cake ones for those people who are not a fan of coconut 😊


  • 85 g plain, dark chocolate
  • 50 ml milk
  • 1 tbsp cocoa powder
  • 115 g soft butter
  • 115 g dark muscovado sugar
  • 2 latge eggs
  • 3 tbsp greek yoghurt
  • 175 g plain flour
  • 1/2 bicarbonate of soda

For topping:

  • 115 g white marshmallows
  • 3 tbsp milk
  • 300 ml double cream
  • 55 g desiccated coconut
  • 55 g plain, dark chocolate


Place the chocolate, milk


and cocoa powder in a bowl. Melt in a water bath and set aside.


Preheat oven to 180 degrees and start with a cake mix. In mixing bowl place soft butter and a sugar and whisk together until fluffy.


Slightly whisk eggs.


Add eggs into a cake mix.


Prepare flour and soda.


Slowly add up chocolate and yoghurt.




Gently fold in flour with soda.


Transfere the mox into a muffin case and bake for 18 minutes.


Now to frosting. Place marshmallows in a mixing bowl.


Add milk to it and melt it over a simmering water. Cool it down.


Baked muffins leave on a wire rack to cool down.




Whisk the cream


And mix it with marshmallows. Add 35 g of coconut and put in a fridge to cool for a 30 min.


Pipe the icing over the muffins.


Dip them in the rest of coconut.


Sprinkle them with a warm chocolate. They taste the best at the same day.
