Gooseberry ice cream

Today is time for something different 🙂 A gooseberry ice creams with a hint of elderflower cordial. They are honestly so good and refreshing.

I don’t have any ice cream maker so all frozen sweets I prepared are going straight to freezer. They still taste good but needed a bit more time:)

Ingredients:
200 g gooseberries- I used ones from a can
100 g sugar
1 i 1/2 tbsp elderflower cordial
250 ml greek yoghurt
75 ml milk

Wash fresh gooseberries  (drain canned ones) and put them in a pan.

Add sugar and 2 tablespoons of water.

Boil it on a low heat for about 10 min.

Set asidw to cool down. Then blend them until smooth,

add 2 tablespoons og elderflower cordial.

In a bowl mix together yoghurt and milk.

Add the goosberry puree and mix well.

Ready mox place in a choosen tin and place in a freezer. Take it out after 2 hours and mix everything together. Place back in the freezer and repeat after another 2 hours.

You can keep your ice cream in a frezer for a month ;p
