I had this meal already twice this month. All you need is a few peppers. With the filling you can go as crazy as you wish- you can stuff them only with meat or make a vegetarian option with some beans. Instead of rice you can use barley or cous cous. Personaly I like them the way I presented (maybe with a bit of cheddar melted on the top and spalsh of tomato ketchup ;p). Also the meal doesn’t involve much of the kitchen skills so everyone can make it and enjoy something new for a dinner.
Ingredients:
- 3 large pepper
- 1/2 cup dry rice
- 200 g mince meat (chicken or beef)
- can of tomatoes
- 1 red onion
- 3 garlic cloves
- few cherry tomatoes or 1 big tomato
- salt and pepper, basil

Start with the tomato sauce.
In a blender place can of tomatoes, 2 garlic cloves, dash of olive oil. Blend finely and season to taste.
Peel and chop tomato, onion and garlic clove.
Cook the rice in a salty water.
Prepare the peppers- de-seed and remove white bits.
Place them in a boiling water for about 4 minutes.
Warm a frying pan with a dash of oil. Add the chopped vegetables.
When they fried place on the plate aside.
Using the same pan fry the mince meat. Add the vegetables.
Finally add rice and half of tomato sauce. Season to taste and mix well.
Heat the oven to 220 c degrees. Fill the peppers with the filling. Top with the tomato sauce (you can also add grated cheese on the top).
Cover with foil and bake for 10 min.
Uncover and bake for another 15 minutes. They are really good as a meal on it’s own.
