Simple creamy mushroom soup


We have admit it… the weather it is not the best at the moment. It was nice and sunny sunday but since then it is constantly raining. Perfect weather for some kind of comfort food. That is why when I saw chestnuts mushrooms in the great price I had bought them and prepare soup. I always thought it is a difficult one but its turn out to be incredibly easy. Kitchen was smell so nice and I also had some mushroom left so I could do rice with fried mushrooms- I could eat it every day 😉



  • 500 g chesnut mushrooms
  • 2 onions
  • 2 cloves of garlic
  • 1 litre of vegetable stock
  • Single cream


Peel and slice the onions. Transfer them to a hot pan with a dash of olive oil.


Peel and chop the garlic. Add it to onions.


Finally slice the mushrooms. I choose chestnut ones because they have more flavour but you can use just a normal ones.


Add mushrooms to the pan and season everything with salt and pepper.


Cover the pan and simmer everything until vegetables get soft- about 15 minutes.

After that add the stock. To get more flavour you can add mushroom stock or mix it half and half (vegetables-mushroom).


Cover it again and simmer for about 20 min.


After that using the hand blender mix the soup.


Add the single cream (to your liking) and slowly heat the soup again (do not boil!).


Serve with with swirl of cream and fried mushrooms. You can enjoy it on its own or with a toasty bread.
