Banana and cottage cheese pancakes

It’s May already and it is soooo hot outside. Wish you could spend all day just lay down on the grass, reading books and munching fruits. That’s the idea of my perfect weekend 😊 To make it work you need: a bit of grass ✔, a good book ✔ (“The Guernsey Literary and Potato Peel Pie Society”) and fruit✔ (Saturday’s  trip to the Grocery shop). But there’s one more thing- even for the lazy days like this you need some energy. And what’s better than an amazing cheesy pancakes with berries to great start of your day. The recipe is really easy ( you don’t want to work hard during the weekend 😋). So let’s crack on!

Ingredients:

  • 1 ripe banana
  • 1 egg
  • 2 heaped tbs cottage cheese
  • 3 tsp self-raising flour
  • 1/2 tsp sugar
  • oil for frying (I used coconut oil)
  • starwberries and rasberries to serve with

Warm up a frying pan. Add the coconut oil.

Prepare a mixing bowl.

Mash up the banana.

Add the cottage cheese.

Add sugar and mix it all.

Then add the egg and flour. Mix it well.

Using a tablespoon transfer the mixture in the frying pan.

Fry them until golden. About 2 min each side.

They taste the best still hot. Serve it with fresh fruits or honey.
