Easy-peasy pizza at home

As I mentioned in my last post it’s time for pizza. I have seen this recipe in Jamie Oliver’s “30 minute meals”. In this time you can prepare your pizza and a few salads to go with it. We skipped salads this time and made two variations of pizza. Both tasted soo good and were perfect and healthy instead of the usual take-away.

I have to mention at this point that my boyfriend and I are a big foodies. We love to watch cooking programms and testing the recipes. Last time when we saw a James Martin recipe for makerel in a pastry with goosberry relish, we loved it so much that we ended up cooking it also for our guests. I’ll try to add this recipe as well in the future. But everything in its own time. For now enjoy our pizza night 🙂

Ingredients (for 2 pizza bases):

  • 2 cups self-raising flour
  • 1 cup water
  • Olive oil
  • Pinch of salt
  • 1 can plum tomatoes
  • A few fresh basil leaves
  • 2 garlic cloves
  • Salt, pepper and cayenne pepper to season

For the topping we used:

  • 1 mozzarella
  • Mixed salami and chorizo
  • Fresh basil
  • Olives
  • Green leek
  • Parmezan

Of course you can use anything as long you don’t overload the pizza top :p

Place the flour into mixing bowl.

Add water, olive oil and pinch of salt. Mix well until you have nice dough.

Place the dough on the floured surface and divide in half. Spread the dough using hands and rolling pin to form a circle a bit bigger than your frying pan.

Roll it about 1 cm thick (I’m not the best with round shapes ;p)

Warm up the frying pan with a bit of olive oil. Also start heating your grill.

Now time for tomato puree.

Into a blender, put the can of tomatoes, two garlic cloves, basil leaves, salt, pepper, a splash of olive oil and cayenne pepper. Blend all until smooth.

Place the rollled dough in the hot pan.

Spread about 4 spoons of tomato puree on the pizza.

Start to add the toppings. We added some mozzarella…

…mixed meat…

…and topped everything with sprinkle of parmezan.

Check the bottom of the pizza. If it’s golden – time for the grill.

Place the pan under grill and wait until the sides get golden.

Half way through cooking you can add fresh basil on the top.
