It’s weekend- time to be spooooiled! And if in the same time you don’t want work too much… this cookies are perfect for you. Maybe not the healthies ones but ohh soo yuummmy. Also you can make them within half an hour 😀
Usually you have all ingredients needed for those cookies at home. The recipe is also flexible- you can any seeds or nuts or even sprinkle a sugar on top. Also for the filling you could use jam, peanut butter, cream, chocolate… your chooice 😀
I made cookies as a quick treat for myself and my boyfriend. To be even more spoiled, for dinner we have a pizza- homemade and ready even quicker than cookies 😀 I will add pizza recipe in the next post. So for now enjoy sweets 🙂
- 125 g self-raising flour
- 50 g ground almond
- 100 g sugar
- 100 g butter
- 1 egg
- 1/2 tsp vanilla essence
- seeds or nuts to decoration
- about 100 g jam for the filling
Preheat the oven to 160 degrees. Put flour and ground almonds into the bowl.
Add the cold butter (I used home made butter)
… and rub the mixture to create crumble.
In a glass whisk an egg and vanilla esence.
Add the egg to the mixture and made a nice dough.
Move the dough to workin surface and roll it.
Cut into even slices- mine ones are 1 cm thick.
Roll them in hands into balls and place on the baking tray. Slightly squash the top.
Sprinkle the top with seeds- here I used black and white sesame seeds.
Bake for 15 minut- until nice and golden.
Spread jam between cookies and make little sandwiches.
All done! So now put the kettle on and enjoy your cookies 🙂
